Dehydrated Potato Slices, Dices & Shreds

Dehydrated potato slices, dices and shreds are made from an air-drying process. To achieve the desired appearance and quality, the potatoes needed to make slices, dices, and shreds must go through a higher selection process than when making other dehydrated potato products. Once the right quality of potatoes has been sourced, they are washed, peeled, and cut into specific sizes/shapes and then cooked. They are then dried and packaged into various sizes.

Dehydrated potato slices, dices and shreds are widely used in the foodservice and retail industries because they are shelf stable and easy to rehydrate. We have packaging capabilities to package in both retail and foodservice formats as well as in bulk bags and totes.

Different Cuts

Slices, typically cut to 1/8” (3mm) thick are widely used in casseroles such as Au Gratin and Scalloped potatoes, but are are also used in hearty soups, on pizzas, and even replacing chips in nachos! They hold their form after rehydration and brown well in baking applications.

Standard Dices are cut 1/8” x 3/8” x 3/8” (3mm x 9.5mm x 9.5mm) and are widely used as diced hash browns and in casseroles. Dices are popular in soups, chili, pot roasts, or for adding more texture to your mashed potatoes.

Shreds, or Hash Browns are dehydrated shredded potatoes that are most commonly used for hash browns, especially in the foodservice/restaurant industries. They have a long shelf life and are easily rehydrated and brown well when frying or baking. Shreds can be either seasoned or unseasoned. Julienned Potatoes are common casserole using shreds. Shreds can be added to a recipe for texture without compromising its flavor.

Casseroles

 

Replace fresh or frozen potatoes and save on the cost of shipping all of that excess water.

 

Soups / Stews

 

Increase the flavor of your potato pieces by replacing fresh/frozen pieces. As the potato pieces rehydrate in your broth, they will absorb more of your dish’s flavor with it.

Food Storage / Back Packing

 

Our products are under 10% moisture and have a standard one-year shelf life in normal bulk packaging (kraft bags), and even longer when packaged in containers made to control oxygen, moisture and light.


Frying / Baking

 

When frying, the potatoes brown well and evenly and the flavors are natural.


 

Additives / Ingredients

Sodium Bisulfite

This is used to help protect the natural color of the product from non-enzymatic browning (e.g., Maillard Reaction) as it reduces the effect of chemical reaction in the product between the amino acids and reducing sugars.

Color, Spices & Flavors

Some of our value-added product offerings will contain flavors (e.g. butter, salt, etc.) and colors (e.g. turmeric). These typically will be foodservice or retail products.

Shelf Life

Average of 12 months from manufacturing date when stored in cool, dry conditions (<30ºC and <65% humidity) in the original packaging.  Please refer to your particular product’s specification sheet as some ingredients and/or packaging may affect that product’s shelf life.
